Rose Wine

Rose wines are made from red grapes but the process differs from red wine production. Instead of prolonged skin contact, rose wines undergo only 24-48 hours of skin contact depending on the depth of colour desired.
The 'must' is pressed and the juice is cold settled and fermented as in white wine production.

Fortified wines are wines to which additional alcohol  has been added.  The added alcohol is either Brandy (a spirit distilled from wine and aged in oak barrels) or 96% ethanol (neutral spirit distilled from grapes).  During fermentation, yeast consumes sugars producing alcohol until the alcohol level reaches over 16-18% depending on the alcohol tolerance of the yeast.  In the fortification process,  Brandy or ethanol  is added to the fermenting must and the fermentation process is prematurely halted leaving behind residual sugar.  The earlier the addition is made, the sweeter the fortified wine will be.
