Ingredients: (Serves 6 - 8)
| 3 Pork tenderloins MARINADE: 2 tbsp. Brown sugar 1/4 c. Soy sauce 1/4 c. Rum |
SAUCE: 1/3 c. Sour cream 1 1/2 tsp. Dry mustard 1/3 c. Mayonnaise 2-3 Green onions, finely chopped |

Combine all marinade ingredients
in glass container; add tenderloins, marinate for 4 - 5 hours, turning
occasionally.
Combine sauce ingredients; refrigerate for several hours to allow flavours to blend. Preheat over to 325F (160C). Place shallow pan of water on bottom rack of oven. Remove tenderloins from marinade (reserve marinade) and bake in shallow baking pan for 45 minutes - 1 hour, basting 3 - 4 times. To serve, slice in 1/2h slices. Bring marinade to a boil. Offer a choice of sauce or marinade with the meat. |
