Ingredients: (Serves 10 - 12)
Make ahead and serve hot or cold.
| 8 slices Bacon, cooked crisp and crumbled (optional) 250 g. Lean ground beef 250 g. Lean ground pork 1 spicy uncooked Sausage, casing removed |
250 g. Mushrooms, finely chopped Salt and Pepper to taste 1 egg, beaten 1/2 c. seasoned Bread crumbs 1/2 c. Pesto* |

Preheat oven to 375F (190C).
In large bowl, thoroughly mix all ingredients together. Form meat mixture into a cylindrical shape; place in a shallow roasting pan. Bake for 1 1/4 hours. * For pesto: combine the following in a food processor or blender: 1/2 c. fresh Basil, 1/4 c. grated Parmesan cheese, 2 tbsp. Olive oil and 1 clove Garlic. * This meat loaf may also be baked encased in a pastry. Use directions from any Beef Wellington recipe and enjoy an elegant meal. |
