The winemaking process begins in the vineyard with the crucial decision of when to harvest. This decision of when to pick is guided by the level of sugar measured in degrees of Brix or Baume, the acid level (TA or titratable acidity) and the pH of the grapes. Other considerations include berry flavour, seed colour and taste, status of the grapevine and weather forecasts. Grapes are either picked by hand or harvested by machine.
